Frozen Berry Frooze Balls

These are perfect to have on hand for a quick nutritious bite and work really well placed frozen in Lunch boxes (they will thaw by lunch)!

They are also perfect to eat one-handed, for those breastfeeding Mammas needing an energy boost.


Ingredients:

10 medjool dates, seeds removed

1 cup raw cashews

1 cup frozen Berries (I used a mix of raspberries, red currants, blackberries and blueberries)

1½ cups desiccated coconut

1 teaspoon vanilla extract

2 teaspoons of lemon juice

pinch of salt


Instructions:

Place dates & cashews in a heatproof bowl.

Pour boiling water to cover & leave to soak for 15 mins, then drain.

Put all the ingredients into your food processor and blitz at high speed until the mixture is broken down, well combined and sticking together.

Use your hands to shape the mixture into balls.

Either leave the balls as they are or roll in coconut or cacao.

Place in the fridge to set for 20mins.


Can be frozen for up to 3 months.
