Frozen Berry Bliss Balls

Ingredients

  • 1 cup frozen Berries (I used a mix of raspberries, red currants, blackberries and blueberries)
  • 10 medjool dates, seeds removed
  • 1 cup raw cashews
  • 1 1/2 cups desiccated coconut
  • 1 teaspoon vanilla extract
  • 2 teaspoons of lemon juice
  • pinch of salt

Instructions:

  1. Place dates & cashews in a heat proof bowl.
  2. Pour boiling water on top & leave to soak for 15 mins then drain.
  3. Put all the ingredients into your food processor and blitz at high speed until the mixture is broken down, well combined and sticking together.
  4. Use your hands to shape the mixture into balls.
